Dave Critchley is one of the best known chefs in England’s North West. Having led large restaurants in Manchester and Liverpool, he is now a director and Executive Head Chef at Liverpool's Lu Ban Restaurant.
Dave charismatic personality has earned him appearances on several TV shows, including the BBC's Great British Menu in both 2021 and 2022 and Come Dine With Me: The Professionals.
Cherry Blossom is Dave's debut cookbook which he has co-written with fellow Lu Ban Director and chef, Mike Mounfield. The book features dishes they developed from reflecting on their experiences of Tianjin, where they spent time with national level master chefs learning the skills and culture of the region's famed culinary delights, and from their own experiences and tastes of fine dining in China.
Impressed with his passion and flair for Chinese culinary arts, Dave was invited to become the final apprentice of Mr Zhengxi Wu, a famed Tianjin master chef. This prestigious invitation is a great honour and means that Mr Wu's has committed to sharing his lifetime of culinary knowledge, culture and cooking skills with chef Dave Critchley.
As well as leading the kitchen for Lu Ban Restaurant, chef Dave Critchley is responsible for the delivery of The Lu Ban Foundation's food education.
